What is a Pipi ?

The Pipi is a burrowing bivalve shellfish (Paphies Australis) that is common in coastal areas right around New Zealand and are a popular delicacy with vacationing kiwi's during their summer vacation, the collection of which being half the fun. Along with Tuatua, Pipi's are a traditional food of Maori. They are easiest to find buried just below the surface of mud or sand in tidal estuaries at low tide.

Pipi are small (5-8 cm) white bivalves with a flat elongated shell with the apex at the middle. The pipi is most plentiful on flat sandy beaches, in sandy and silty mud in estuaries, and harbours where there is considerable water flow. By releasing a thread of mucus, which makes them more buoyant, they are able to float in the water column and move to new locations. Where they find good living conditions they can be present in high densities.

Pipi are edible and collected is relatively easy, with the most common cooking methods being boiling in water, making into fritters, or merely roasting on the barbecue traditional. The harvest limit is 50 per person per day, and although a minimum size is not stated in the regulations, only the larger pipi should be collected.

Similar to Pipi's and their closest relative, Tuatua (Paphies Subtriangulata) are larger than Pipi and found on sandy beaches (with surf). The shells of Tuatua's are slightly asymmetrical, with the top of the hinge being slightly to one side. They are usually harvested when there is a very low tide. People feel for the shellfish with their feet, only grasping them with their hands when they have located a group. The taste of Tuatua's are the same as Pipi's.
